Biography

1998年、兵庫県生まれ。ハエの一種、アメリカミズアブを用いたオンサイト食品リサイクルの実現に取り組むGrubin(グラビン)の代表を務める。ミズアブ幼虫の持つ、非常に高い食品残渣分解能力と、優良なタンパク質源としての利用可能性、そして成虫が病原菌を媒介しない安全性を活かし、分散型食品残渣処理システム構築を目指す。平成30年度東京大学総長賞、日本財団ソーシャルイノベーションアワード2018最優秀賞など受賞多数。東京大学医学部医学科に在籍中。孫正義育英財団3期生。

Insects may be a valuable food source in the future

Description

The global population is expected to exceed 9 billion by 2050, and the demand for food is expected to increase dramatically. In order to avoid a devastating food crisis, the global search for innovative alternative foods and proteins is underway, including those led by international organizations such as the United Nations.
In this session, we will highlight "insects" as a highly nutritious food source. We will showcase business and research cases centered upon insects both in Japan and overseas and discuss the reality and potential of utilizing insects for food.
